Marmelo & Mr Mills

Chroma Group successfully delivered the high-end fit-out of Marmelo & Mr Mills, the signature food and beverage offering within Melbourne Place Hotel on Russell Street. Delivered under a negotiated arrangement, Chroma Group managed procurement, programme coordination, and construction to deliver the hotel's Portuguese-inspired restaurant and Spanish-themed basement bar, working closely with the client to undertake a comprehensive value management process that preserved the design intent while meeting budget objectives. The project included the delivery and coordination of commercial kitchen and bar facilities, bespoke joinery, premium FF&E, complex building services, and a feature staircase linking the two venues, complemented by a striking custom lighting installation that forms the centrepiece of the hospitality experience. Delivered in parallel with the base building works and within an operational hotel environment, the project required carefully planned staging, close coordination with the base builder, hotel operations, consultants, and suppliers, and rigorous quality management to align construction activities with programme and operational requirements. Through collaborative delivery and meticulous execution, Chroma Group successfully realised the client's vision, creating two distinctive hospitality destinations that seamlessly integrate with Melbourne Place Hotel while meeting the highest standards of quality, functionality, and guest experience.
